The New Way to Cake is my debut cookbook published late 2019 and is all about one of my favourite things - CAKE! I look for cook books like this, unusual recipes you won't find in other recipe books and ones that include some 'proper' ingredients, fruit, nuts, vegetables and spices rather than all chocolate and icing. The tag line is “Simple Baking Recipes for Every Mood,” and I have a lot of the ingredients on hand. The smoked paprika is bloomed in melted, foamy butter, and once it's cooled, it gets added to the dough (which is made mainly from flour, yogurt, warm water, and yeast). And you talk about how vanilla is the second most expensive spice in the world, but it gets a bad rap for being boring.

And even though I think baking is so precise, complex, and labor-intensive, I’m pretty tempted by Benjamina Ebuehi’s combinations of savoury and sweet. Bee Wilson, The TimesA Good Day to Bake is full of 70 sweet and savoury baking recipes for any day of the week, led by flavour.It’s exactly this attitude that sets A Good Day to Bake apart from so many other cookbooks that focus on simplicity. They are more like naan than flatbreads, I think, as they are made with yeast, and are soft and fairly thick. My baking inspiration - I was so thrilled to see a second book from Benjamina and this one mixes bread, biscuits, and cakes (my cake Bible is still her first book - “A new way to cake” should be on everyone’s shelf!

Lots of yummy goodies in here, but I think I prefer Ebuehi's first book as the variety in cakes were more up my street. Whether you want to bring it to a picnic or throw it together for lunch, if you use rainbow carrots like Ebuehi recommends, this recipe is just as eye-catching as any decorated layer cake. While my husband and I loved the coffee glaze, the kids didn't like it (and they aren't picky, especially about sweet foods). Edwards is one of my favourite food photographers and she does such a wonderful job of capturing Ebuehi's work.

Benjamina Ebuehi : It's funny because when I chat to food friends or people who are really into baking and cookbooks, vanilla is not necessarily seen as boring to them. Publication dates are subject to change (although this is an extremely uncommon occurrence overall). They star flavors not usually used in bake goods, like tea, herbs, and less usual fruits and veggies, so tastes are new and even startling in a good way. And so just wanting people to approach it in a different way and just really enjoying each step, focusing on everything that you're doing, the little things, the flavor that you're putting in, the time and the energy that you're putting in rather than what does it look like at the end.Though it may not be the first thing to cross your mind, some of the most satisfying simple baking recipes are actually savory as opposed to sweet. Going through the ritual of bringing out the measuring scales, pouring out flour, whipping up the eggs, stirring the batter and impatiently slicing up warm cake is a beautiful thing that deserves to be enjoyed all year round no matter the day, season or occasion. It takes something familiar, like the classic British pork sausage roll, but changes just a couple flavor notes—with no more effort. I made these for lunch one Sunday and my daughter insisted on saving one so that she could take it in her lunch the next day.
