About this deal

This Allinson Dried Active Yeast gives a lift to your hand-baked breads. Simply reactivate it by adding water and you've got the perfect ingredient for traditional baking. If the recipe calls for fresh yeast, just replace it with half the quantity of Allinson Dried Active Yeast. 650g of flour usually requires 15g or one level teaspoon of Dried Active Yeast.

If you have already looked at my gluten free Panettone recipe, you will see that it uses both xanthan gum and psyllium husk. Both are important. But the psyllium husk is crucial. Do not try to make the recipe without it…. Psyllium offers essential structure. And because it is well hydrated in the recipe, brings sustaining moisture properties too.

Put the mix into a large bowl with 7g Allinson's dried easy bake yeast and 1 tbsp sugar (if you want to use honey or other liquid sweetener then add at the next step). Stir well. To test them, see if you can bend the butter a little - if it's firm but still flexible, it's good to go. Ready to start rolling? Extraction is the percentage of whole cleaned wheat grain that is present in the milled flour. White flour (of approximately 70-75% extraction) is high in starch, and is produced by removing the bran and germ during the milling process. Allinson Strong White Bread Flour has a high gluten content which makes it particularly suitable for bread making. Brown flour is of approximately 90% extraction, which means that practically the whole grain is used in its production, apart from the 10% that is the bran. The resulting flour is finer than wholemeal, producing loaves with a lighter texture, and a full, nutty taste. Allinson Wholemeal flours contain 100% of the wheat grain, retaining all the natural nutrients. They contain significant amounts of fibre, iron and B vitamins. Iron and the B vitamins thiamin and niacin, together with calcium, are added to white and brown flours, to replace nutrients removed during the milling process.

The Innovation Team set out to create a gluten-free flour that would make delightful sandwich bread as well as towering layer cakes (and more).Remove the milk from the heat, stir in 20g sugar and then add the dried yeast. Stir, cover with a tea towel and then leave in a warm spot for 5-10 minutes. It should form a lovely froth on top when it's ready.
