By using the Service, and by creating an account you represent, warrant and confirm that you are of legal age. The signature character of the brand is the infuse heathery aromatic smoky flavor. This character of the whiskey is added by the burning of peats. The peats are carefully selected and dried in summer. In the mouth: It’s quite a deep dram, in that there is a slight intensity initially, perhaps thoughtful on the initial sip. Fruity, juicy, perhaps an herbal tea, and that compost heather style of a peaty smoke, coated in a wee sweet case. On the finish: pepper, spice, herbs, smoke… longish. Conclusions After a while, the finish is when a little oak from the barrel comes in. It’s quite subtle which is actually a nice change as a lot of scotches have a very prominent oaky flavour. The usage of aromatic peat is one of the key ingredients in making of whiskey. Nose: The sweet meets the peat as was promised. Honey, golden syrup, salted caramel and an assortment of dried fruits provide a warm sugary introduction. This is followed by the traditional aromatic, floral HP peat, which is indeed upped a notch for this release. It’s quite ashy and is supported by some damp earthy hay-like malts which provide depth. Light citrus, apple peels and a healthy dose of oranges make for rather the fruit orchard. Both smoke and sweetness are enhanced after a short period of resting. The addition of water is interesting – immediate orange barley water with a hint of ginger! The traditional process of maturation helps the brand to add unique flavor in the drink. During the process of cask harmonization flavors from different casks combine and harmonize. It adds an aromatic smoky flavor to the whiskey. The company still uses the traditional and labor-intensive process of production. They use the process of floor malting and turn the barley with their hands every day. The company still uses the process of turning malt by hand. Their hard work and effort in every grain results in delivering the aromatic smokiness. This key process of products makes Highland Park distinctive from others. Smell: Straight away, the peat seems more intense than other Highland Park expressions. Not quite Islay peat, but more than you’d expect. There’s sherry too, with raisins and sultanas. Toffee and heather honey. Apple. Lemon. Straw. Sea salt and pepper. Charcoal.The taste is when the peat hits you but it’s nicely rounded off by the sweeter sherry notes or raisins. There’s definitely some of that highland savoury spice in there but it’s more mellow than say their 12 Year Old offering. The brand offers several ranges of whiskey that offers different notes of nose, taste, and appearance. In color generally the whiskies have clear, bright gold color or its available glowing amber. In the taste notes all the range of whiskey is infused with an aromatic smoky flavor. The combination of fruity flavor and winter spices enhances the flavor notes of the whiskey. First released in 2017 “Dragon Legend” is a smokier version of the Highland Park single malt, named after the legend of Sigurd, who slew Fafnir the serpent in service of the Gods. In this old Norse tale, Odin and Loki, gods of Asgard were travelling in disguise in our world, or Midgard. Stopping to rest at a small dwelling, the Gods were robbed of their gold by Fafnir and his brothers. A crime that was to have dire consequences for those involved. With the name ‘Dragon Legend’ we just had to try Highland Park’s more unique offering. Sherry cask scotches are popular among the Highlands with distilleries like Glenfarclas also using the fortified wine casks. Highland Park usually peat their whiskies but are not on the same level of smokiness that you’d find with a lot of Islay options. However, with a dragon in this product name, let’s see if it’s any more toasted. Consumption of moderate amounts of whiskey is also very advantageous to health. It raises the amount of good cholesterol in the body that helps to lower the risk of heart disease.

Highland Park is a peated whisky, but for many it’s a more accepted peat, perhaps lighter and easier on the palate. Tt can push the boat out on some expressions but – being honest – if you’re a peat fan there are many other drams to explore away from Highland Park to satisfy your fix.
