Peanut Butter (Creamy or Crunchy) – for this recipe my grandmother used to always use creamy peanut butter. Whether you are using natural peanut butter, unsalted peanut butter, crunchy peanut butter, organic peanut butter or good old fashioned jif peanut butter. In modern times the Wiphala has been confused with a seven-striped rainbow flag which is wrongly associated with the Tawantinsuyu (Incan Empire). There is debate as to whether there was an Inca or Tawantisuyu flag. Spread cooked filling over baked and cooled shortbread base. Top with meringue, ensuring meringue completely covers the filling, right to the pan edges. Bake for approximately 10-12 minutes, or just until meringue is a light golden brown.

These No Bake Peanut Butter Marshmallow Squares are from my repertoire of my Grandma Yvette’s recipes, she was the baking and cooking queen! Having treats ready for company at any time was really common in my grandma’s house. In modern Ecuador, the Wiphala is identified with the Indigenous social movement mainly represented by CONAIE (Confederation of Indigenous Nationalities of Ecuador). This organization has had an important role in massive protests in the late 1990s and 2000s. The flag of CONAIE is a wiphala with a mask in the middle from a pre-Inca Ecuadorian coastal peoples known as La Tolita. However, you can easily customize your blanket by changing the size of each granny square or by varying the number of squares. GAUGE I like using crunchy peanut butter for this recipe because it gives the bars a nice crunch. Also ensure to use a tasty peanut butter, preferably a salted one for this recipe!

I have no idea the origin of Rainbow Square but I do believe it may pre-date the 1960s. This recipe is based on, and adapted from, one my mother used to make as a treat every summer. No clue as to why it was a summertime treat in our household but that is the only time of the year I ever recall having this square and it was always considered to be a special treat!
