However, you cant deny that past the strong smell it tastes delicious. Its decent proof for a reasonable price and can be found in most stores. Thats not the case with many Bourbons on the markets today. It is certainly worth hunting down and adding to your list of new Bourbon to try. Nose: The aged notes that I experienced in the 2010 Noah’s Mill are completely absent with this bottle. Instead I find thinner, more artificially sweet scents.That makesit smell several years younger overall compared to the 2010 bottle. Scents of cooked apples, golden raisins, grits and cinnamon. There are also lots of floral notes like flower bouquets and bee pollen. Caramel and oak are very distant but are the only “typical” bourbon notes I can find.

It’s widely speculated that it’s a blend of bourbon ages and many bourbon mashbills, including high-rye, low-rye and wheated bourbon grain makeups. If you were playing whiskey Jeopardy and given only that information as the hint at guessing the producer, you’d likely answer “ what is High West distillery ?”

Nose: A very pleasing burst of sweet oak notes hits first. This smells similar to a bottle of Elijah Craig Barrel Proof in some ways, only a tad bit richer. The age of the barrels is easy to recognize; they’re old. Wafting scents of s’mores combines with some light scents of cornbread (could this be the youthful barrels that the batches supposedly used?) I’m also pleasantly surprised to find a very faint berry note. The promise of every would-be craft distiller sourcing whiskey is that someday they’ll be distilling their own. The sourced whiskey is merely a bridge, meant to get a brand name out in the market and to provide some cash flow during the period when distillery construction, production startup, and maturation occurs.

Noah’s Mill is born

Like any top-shelf bourbon, you don't want to sully the flavors with any mixers unless you're a non-traditionalist. Most drinkers will find the bourbon best with a few fingers in a low-ball glass, while a splash of water or an ice cube adds a cool rush to the beverage, especially if you're enjoying it outdoors. Palate: The front of the palate reflects the nose with warm spice notes of cinnamon, mint, and allspice that blend with barrel notes of seasoned oak, toasted pecan, and burned sugar. In the mid-palate, the spice notes subside and the bourbon takes on more barrel flavor characteristics with soft notes of cream, caramel, and slightly bitter toasted pecan notes. It also carried with it a 12 year age statement for a small time, likely ceasing around 2006 just like Noah’s Mill did. Willett wanted to create differences between each core label that they made so they created four distinct bourbon mash bills.
