Beat the remaining cream and cream cheese together and then systematically add the gelatinous caramel mixture to it while stirring. For fans of Twix bars—shortbread bars layered up with caramel and coated in chocolate—this millionaire shortbread was made for you! This chocolate dessert can be sliced up into any size you prefer, making it the perfect bake sale treat, homemade holiday food gift, or unique addition to a Christmas cookie plate. The caramel layer is made with condensed milk and a little golden syrup and once cooled, it sets like a dream every time – it’s never failed me yet ( my Butterscotch Sauceis a caramel which doesn’t set hard no matter how long it chills but the condensed milk is like a cheat’s version of fudge, so it sets once cool). A molten puddle of dark chocolate atop that toffee-like caramel and sweet, crumbly shortbread balances out all that buttery sweetness. Step Four: Put the butter, sugar, golden syrup and condensed milk into a medium saucepan over a high heat. Stir continuously using a wooden spoon or rubber spatula. Let the caramel boil for 5-7 minutes, it's ready when it's a deep golden colour and has a fudge-like consistency. raspberry and lime cheesecake - this cheesecake is a much lighter alternative than the Millionaire's cheesecake If you want to make this a true Millionaire's cheesecake recipe and serve it in a glamorous fashion, then I recommend using edible gold sheets. Edible gold is often something one sees on top of a dessert in a fancy restaurant. Even though edible gold sheets can be quite expensive, they make the dessert look the part. Use a fork to lightly dot holes over the surface of your shortbread dough, then pop into the oven to bake for around 20 minutes of until golden brown. Heat the reserved caramel from earlier in the microwave for 20 seconds, then drizzle over each slice of Millionaire's cheesecake before serving for an extra touch. Vanilla - Try to find a high-quality vanilla extract or vanilla bean paste. Avoid using vanilla essence if you can. Prepare your baking pan with parchment paper and the cooking spray then flatten the mixture into the bottom of the pan and bake for around 15 minutes. You will need to give the bites a really firm push to get them out of the Lakeland tin but look how well they turn out!

Millionaire's cheesecake no bake

As mentioned above, it is essential that you use a springform tin or loose-bottomed cake pan to make this cheesecake (or any cheesecake, really). Combine the flour and butter cubes in a food processor and pulse until the mixture resembles fine breadcrumbs. (Alternatively, you can rub the butter in by hand.) Add in the caster sugar and pulse again until combined.

Put the cream cheese and caster sugar into a large mixing bowl and beat together using an electric handheld whisk. Add the lemon juice, vanilla extract and Carnation caramel and beat again. I used two ingredients for the chocolate ganache: dark chocolate and double cream. I know some people are put off by making ganache - probably thanks to its complicated-sounding name, but it's really easy.Tip: If you don't plan to serve this Millionaire cheesecake the next day, I recommend adding an extra thin layer of melted chocolate on top of the base of the cheesecake and letting it set before pouring the cheesecake layer on top. This will create a barrier between the shortbread and the cheesecake and prevent the shortbread from going soggy if kept in the fridge for a few days. Just melt about 100g of chocolate in the microwave and pour a very thin layer on top of the shortbread. To make the topping, melt the white chocolate in a bowl. You can either use the microwave to heat the chocolate in short bursts, being sure to stir in between. Or you can add an inch or two of water to a saucepan on a low heat, then place your chocolate in a heatproof bowl on top (not touching the water), stirring continuously to gently melt. Millionaire’s Shortbread has 3 parts (or layers) to it: Shortbread, Caramel, and Chocolate. It’s easier to breakdown how to make each of these components separately because making the final dessert is just an assembly of them all.
