Due to the long brewing time and the cold temperature of the water, the grind size for cold brew should be very coarse, we’ve set the chart to 800-1400 microns, but some methods go even higher. Reliability

The boundary may seem high at 1400 microns (1.4mm), but a high proportion of coarse coffee grounds that are attributed to some brew methods can be this large when measured.

So if you don't need the espresso capability, it's fair to say that purely talking about grinding performance, you're probably not going to experience a great deal of difference in the cup from your extra spend. What you will benefit from, however, is the amazing user-friendliness, ease of use, and lots of features that you won't find on most other options. It's just ridiculously user-friendly, and that's the main thing I have to say about most Sage machines, really, they seem to think of just about everything to make them as idiot-proof as possible, although to be fair even Sage couldn't do quite a good enough job of that with this idiot, as I couldn't figure out to start with how to get the Gaggia classic portafilter to rest in the portafilter cradle. We have decided not to define the ranges exclusively to what the inventors of the brew methods intended or what coffee specialists insist is the right way, but defined by how people use it most frequently. During testing, we did notice a couple of issues. One is that the grind size dial would sometimes shift slightly during finer grinding, though this didn’t appear to affect the end result. Another is that the optional portafilter attachment, while a very nice touch, proved messier than it was worth. Barista & Co. admits that the Core is not an espresso specific grinder. So espresso aficionados after the finest of grinds may want to splash out on a more precise machine (such as the Baratza above).
