Mastic trees actually grow all over the world, but Chios is the only place where the trees produce resins from their bark, which is whatcreates the distinctive taste. In the US, Metaxa needs to be imported, but it is very popular here and has been since it was first introduced over 100 years ago. In fact the success of Metaxa in Greece was one of the driving forces behind the brand’s success overall and perhaps the main reason it is now seen as one of the 100 biggest drinks brands in the world. Later, when cognac became strictly defined Metaxa and other drinks had to redefine themselves, and Metaxa became a brandy. For years it was regarded as the Greek brandy. But then the spirits world defined what a brandy was, and brandy was a drink that, amongst other things, did not contain wine.

Years of testing, perseverance, and love for the product have resulted in the Greek drink having fans from all over the world. The best Metaxa brandy is more than the sum of its parts, blended to perfection; this mix of brandy and wine is a masterclass of Greek spirits know-how. Instead of brandy, twists to the traditional recipes call for rum, ouzo or other alcoholic beverages. The heads and tails are removed and re-introduced into the distiller along with the next batch, while the heart, the highest quality part of the distillation after dilution, maturation, and filtration, is led to bottling.

The sprinkling of icing sugar is probably due to the fact that Christmas is during winter when there is snow but this is only my assumption. As one of the most famous and well known Greek alcoholic beverages, ouzo is a drink that reminds most people of warm days by the sea. It is traditionally produced in copper stills, where alcohol is mixed with water, aniseed, and other herbs and spices like fennel, cloves, and coriander. There are four main varieties of Metaxa: 3, 5, 7 and 12. There are also special edition versions, such as their Private Reserve. The number references the amount of time that the blend has spent in maturation. So, Metaxa 3 has spent three year in those French oak barrels, Metaxa 5 has spent 5 years, and so on. Metaxa 7 Stars takes it up a notch with a sweeter honeyed note, and the 12 Stars offer a light hint of citrus. Still, the Grande Fine infuses all the Stars in a stunning decanter that tastes incredible and makes a gorgeous gift. Despite its high alcohol content, Kitro of Naxos is particularly sweet and aromatic, making it a favorite of even those who do not like strong distillates. This is another PDO product, and it isproduced in three main versions: white (strongest), green and yellow - making them very distinctive.

In Cyprus, we used to make them with spry shorteningbut this is not available in Greece. I’ve also made them with buffalo milk butter and they tasted amazing. Records the default button state of the corresponding category & the status of CCPA. It works only in coordination with the primary cookie.

On the palate, it’s very smooth and honey sweet, with notes of dark dried fruit, chocolate, and dried and candied orange zest. It’s more peppery and exhibits a substantial palate weight and a viscous, oily character. Generally speaking, the older Metaxa expressions show more dark, dried fruit elements and a more significant spiciness and pepperiness. Younger expressions are more floral, with more noticeable rose petal aromas and fruit notes that lean more toward stone fruit, like apricot and peach, and less toward dark dried fruits. Metaxa 5 is when this drink really starts to come to life. Despite a difference of just two years in age, there is a huge difference in taste and this is typically recommended as the best starting point to truly experience this drink. Metaxa 7 A unique sensation on the palate with sweet spice, dry prune, a hint of grape syrup, and subtle oak.
