Brought back inside and left to rest for a few months, the wines are then blended together into oak casks. Surrounded by the sun-drenched vineyards that overlook the Mediterranean Sea and its famous oyster farms, our home is like no other. A unique stage in the creation of Noilly Prat Original Dry involves a selection of wines being aged outdoors in oak casks exposed to the natural elements. It's the brand of vermouth I've been using for a few good years now, so the extra bottle bottle was very welcome.

Red Noilly Prat is made in the same way, but with the addition of 30 flavourings, which produce the rich red colour. The Algonquin cocktail is named for the Algonquin Hotel, which is composed of rye whiskey, Noilly Prat and pineapple juice. The distinctive taste of Noilly Prat is delicious served chilled on its own, with a mixer or in cocktails. Tours explain the production process, and end with a tasting of the vermouths and cocktails made with them.

The wine stays in these casks for 8 months, maturing and absorbing the flavour of the wood, before being transferred to smaller oak barrels which are taken outside and left for a year. Noilly Prat is often used in cocktails, the most common and well-known of which is probably the martini, consisting of one part Noilly Prat to one or more parts gin or vodka, with a dash of orange bitters, twist of lemon, or olive garnish. Noilly Prat Original Dry is the flagship of the Noilly Prat range, and an icon in the gastronomy and mixology world.

The blend is transferred to large casks and a secret blend of 20 botanicals (including Roman chamomile, yellow gentian, nutmeg, and bitter orange) is added by hand each day in a gentle maceration lasting 3 weeks, after filtration, the wines rest for 6+ weeks before bottling. With its complex blend of some of the world’s finest herbs and spices, being simply served over ice and with oysters will transport you to the South of France. An aromatic blend of 20 different herbs and spices sourced from all over the world are used to gently infuse the wines. The exact mix of herbs and spices that goes into Noilly Prat is a closely guarded secret, but includes camomile, bitter orange peel, nutmeg, centaury (yellow gentian), coriander, and cloves. Wine that was transported long distances in barrels and exposed to the weather became darker in colour and fuller-flavoured. In the oak casks, a process of maceration, supposedly unique to Noilly Prat, takes place over a period of three weeks.

This is where vermouth comes in: it has a screw-top lid, keeps well, and has a transformative effect on anything you care to splash it in. It was to mimic this natural process that Joseph Noilly, in 1813, designed a process that made France's first vermouth. This unique process is mainly based on the ageing in oak casks, in the open air, of white wines, exclusively "Blanc de Blancs". An aromatic blend of herbs and spices sourced from all over the world are used to gently infuse the wines and create the unique bouquet and wonderful taste of Noilly Prat. It has an aromatic blend of herbs and spices which gently infuses the wines to create a unique bouquet and taste. This fantastic amber expression from Noilly Prat, is made in the same way as their classic original dry vermouth, but with the addition of botanicals such as cinnamon, cardamom and vanilla, this is a richer, sweeter and more full-bodied release. Some of the data that are collected include the number of visitors, their source, and the pages they visit anonymously. Before steamships wines were transported over long distances around the world by sail, barrels subjected to varying temperatures and humidity over many months giving them a unique character, in the age of steam, wines lost this character - faced with this Louis Noilly began to age his wines in the open air on land to recreate conditions on board a ship - this technique was so successful it is still used at Noilly Prat today.
