Bring the fruit up to boiling point then remove the bag of pips and squeeze and scrape the outside of the bag to release any remaining pulp. Old recipes suggest sterilising them by putting them in a hot oven but I find a recent run through the dishwasher will do the trick.

Before screwing on the lid, add wax discs, shiny side down, to the surface of the marmalade to create a seal.Even if you have a sugar thermometer (look for 105C or where it says ‘jam’), I’d still recommend the saucer test. To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. Empty oranges into large pan, add apples, stir in 865gm sugar plenty of pectin in apples so no need for jam sugar. Certainly a good safe product for those new to marmalade making, manufacturers instructions easy to follow I amended as I prefer less sweet.

Its heavy bottom dissipates heat for an even boil, and the wide, deep sides ensure an efficient and even evaporation as well as preventing too many hot splutters of boiling preserve. Left it for a about 45 minutes after first cooking of the the oranges (unintentional but got interrupted!Marmalade makes a great gift, but to avoid any unwanted (mouldy) surprises, sterilise jars and equipment just before the marmalade is brought to a rolling boil to set. My family have always been Marmalade addicts, and for years I have persisted in making it from scratch using fresh oranges. Rinse, then transfer just the jars and lids to a roasting tin and heat in an oven preheated to 140°C (120°C fan) gas 1, for 20min. Simmer for 1 1/2 to 2 hours, turning them occasionally until they are soft enough for you to pierce the skins with the end of a teaspoon. After the marmalade has been on a rolling boil for 15min, remove it from heat and spoon a little (using a sterilised teaspoon) on to a cold saucer.

If you are busy working, a hour or so can still be fitted in handily after the washing up of an evening. It is OK to press the flesh quite hard to extract the maximum of juice and pectin and doesn’t make the end result cloudy. Hold the bag over its bowl, and squeeze and pummel it until you’ve extracted every last drop of juice and gunge through the muslin. The last lot I made took 15 minutes to get to setting point, and I checked it using the finger test, and the thermometer to be sure.Taking just 30 minutes on your hob, you can make up to 6lb of marmalade with none of the hassle of preparing your fruit beforehand. I’m not a great one for ‘the perfect this’ or ‘the perfect that’ in recipes but if you’re a marmalade aficionado I promise you this is as good as it gets. You know it is dissolved when you no longer can feel the gritty texture of the sugar between wooden spoon and pan. How quickly it gets to setting point is variable as it will depend on the age of the oranges, and the level of pectin in them. The fruit can also be used as a base to add with other fruit for example 1kg of Limes finely sliced with peel and and additional 1kg of sugar it doesnt need to be jam sugar and a very nice Lemon Lime Marmalade will be made which will also set. Or add ginger or molasses or what have you - because you're just making a few jars each time you can experiment. The peel also needs to be very soft before pouring in the sugar as it will not soften any more after the sugar is added. This marmalade is ideal for anyone new to making preserves, all you need to do is add sugar and water as detailed on the instructions and providing the recipe and instructions are followed a good set will be achieved.
