Head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour. One of the best continuous rum bottlings that use sherry casks, absolutely beautiful – nutty, fruity and spicy with a nice, velvety mouthfeel.This is considered to be one of the most efficient and environmentally friendly rum distilleries of rum in the world. Seale acquired Doorly's in 1993 and, in keeping its history, decided that it would become an export brand. Doorly’s 8 Year Old is molasses based, pot and column distilled and aged for 8 years in ex-Bourbon casks with, potentially, a component that was aged in former cognac casks for 8 years. This a double maturation rum, first one being for 5 years in ex-Bourbon casks and the second one going up to 3 additional years in former Oloroso casks – hence the lack of a number on the label, as I don’t think a “6 years old” in its branding would do it justice.

The choice of a Macaw as their icon dates back to the founder, Martin Doorly, who originally chose the beautiful Scarlet Macaw to appear on the very first bottles of Doorly's Rum. Doorly's 14 Year Old is a blend of pot and column still rums, it has been aged predominantly in bourbon casks, along with a portion aged in Madeira casks, imparting a touch of sweetness. Doorly’s 3 Year Old is molasses based, pot and column distilled, aged for 3 years in old ex-Bourbon casks and filtered to remove most of the colour. The result is a delicate fusing of complex flavours giving rise to a rum of unparalleled excellence.

Then a two-step fermentation process which is computer temperature controlled is adopted in the production of Doorly's rum.To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. Meticulously matured in ex-bourbon casks, this Caribbean rum boasts a robust and full-bodied flavour that captivates the senses.
