I’m only going to simmer a small amount of the wine berry mixture with my sugar, Might throw in a vanilla bean or a squeeze of lime or both. What ABV is crème de mûre? It is 17% ABV (alcohol by volume), so it has a relatively low alcohol level, similar to most sweet liqueurs.

Cooking the mixture will help the sugars dissolve and bring out the flavour – you could definitely try without the cooking step, although you may want to use a simple syrup in place of sugar as it may not dissolve well without cooking and you certainly don’t want a grainy texture! As for preserving it, simmering it definitely helps with preserving but it’s mainly the sugar and alcohol content that will do that job. If so, how long are you putting them in the water bath for, and how do you know your acidity is high enough for proper preservation? Most of the liqueurs I’ve made have three major components; vodka, sugar, and fruit. Limoncello is made just from the rind, vodka and sugar, and the cranberry liqueur is made combining chopped berries with vodka and sugar. Some recipes called for vodka only and some called for vodka and brandy. Some called for using red wine, which would give it a deep color, but I thought it would add too much of it's own flavor.Everything here is made with love. We make all of our recipes as approachable as possible so that you can enjoy them as much as we do! When selecting a red wine and gin for Homemade Creme De Mure make sure they are varieties you like. You can really taste the red wine and gin in this, so they have to be good quality to enjoy the end result simply over ice.
