We did exactly that in the middle of testing recipes for the air fryer cookbook and this new fakeaway kebab recipe was born and its just so good that we have made it several times now. One thing that helps when you grill is to butterfly the thigh so that it’s relatively nice and even. I really enjoy Asian inspired cuisine and since I found this recipe it has been my go to marinade for chicken thighs. If it smells good, and chances are it absolutely will, the chicken will be safe to eat after baking. the flavour was amazing, it had the perfect amount of salt and pepper and extremely extremely moreish!You mention the taste of maple syrup in the intro, but have honey listed in list of ingredients, followed with “(or maple syrup)”. I am sure this is also why, I originally heard of air fryers in the Slimming World magazine many, many years ago. I marinated the thighs all day and I also slashed the thighs with a sharp knife 2-3 times on each piece to allow the marinade to really get in to the meat. I had some bourbon infused maple syrup that I had no idea what to do with (son bought it by mistake and gifted it to me). So over the next 10 plus years I barely touched a doner kebab and instead we had other takeaways and also made plenty of fakeaways at home. Chicken breasts and thighs can be cooked together but will often need to be pulled out at different times for best results. Then whilst we were making our air fryer cookbook ( you can find out more about it here) I suggested that as we have made an air fryer meatloaf before, we could easily take the same concept and convert our slow cooker recipe for doner kebab to the air fryer and make an air fryer doner kebab. Sometimes I season the chicken with other spices like Adobo or Cayanne red pepper before cooking just for some extra flavor. Then place the tightly wrapped doner meat into the air fryer and air fry for 25 minutes at 160c/320f, then open the top of the foil so that the meat is exposed and then air fry for a further 20 minutes at 180c/360f or until crispy to on top to your liking.

So it’s ok to bake the chicken in that marinate it’s been sitting in for a few hours in the fridge straight to your oven? The only thing you need to be careful about is the cooking time as boneless skinless thighs are smaller and are not protected by skin. For example, if you bake bone-in, skin on thighs at 450 degrees F, they will reach 165 degrees F internal temperature and be ready in about 25-30 minutes.
