It has been roughly seven years since I made the bold decision to quit my job in Australia, electing to become unemployed and to take a chance at life on the other side of the world. These are perhaps one of the best friand recipes I’ve tried, but I could be biased because I happen to love anything with lemon. The friand moulds are about 125 ml (½ cup) in capacity and are deeper than the standard muffin mould.

The MasterClass non-stick 12 Cup Friand Pan is a specialty tin designed for perfect friands every time. I add a pinch of salt, a little lemon zest and some almond essence, but sure it’d be fine without these too. As egg whites form the major ingredient in this recipe, I think substituting it would make a big difference to the flavour and texture of the cakes. However, the French don’t know about the Australian friands, so you won’t find these cakes sold anywhere in France.

But the story goes that a French chef working in Australia reinvented the humble financier by baking them in an aspic mould to produce what is now popular in many Australian cafés and bakeries. Melt the butter in a small saucepan over a low-medium heat and let it cook for a couple of minutes, just so it darkens slightly. Forget every other recipe you’ve ever read where you have to whisk the egg whites until they froth or start to peak. I’m not sure if it’s supposed to be dense or the supposed to be Aerie almost like angel food but a little more dense.

I put "converting grams to cups" into google and found this ace convertor site where you can convert precise quantities using the calculator. Even I couldn’t believe how a lone single woman like myself had accumulated kitchen accoutrements that would be excessive for a family of six.When it came the time to re-purchase some of these items, I made the unfortunate discovery that nearly everything was triple the cost in Switzerland, that muffin tins on this side of the world were a different size, and that some baking tins were just simply irreplaceable.

I love the recipe as well as the sentiment – you know my life is similar to yours in the starting over somewhere (relatively) far away.

By day (and night if I’m being honest) a mild-mannered City professional, but at weekends I become THE CAKED CRUSADER. I have to admit to not having a clue what a Friand was until reading your post but they do sound delicious. Most products are designed with rolled edges and sandblasted bases for extra durability and stability. But I have copied the pic of the Friand tin and it is on its merry e-mail way to my Sister in law in Australia.We don’t share your credit card details with third-party sellers, and we don’t sell your information to others. I couldn’t imagine a future without my kitchenalia and I was prepared to pay whatever the cost to have them accompany me to my new homeland.
