One of my all-time favorites is Ancho Reyes, a Mexican liqueur made from dried ancho chiles. Its unique and complex flavor profile has made it a staple in many bars around the world.Ancho Reyes Original is meticulously crafted using only the finest ancho chiles (sun-dried peppers), ensuring unparalleled quality. The chillies are carefully selected, harvested, and then sent to the manufacturing facility to undergo a 6-month maceration process. Finally, each bottle is labelled and bottled by hand, resulting in a truly unique and exceptional liqueur.

An Old Fashioned, Margarita, Daiquiri or a Negroni can all be made by swapping out a little Ancho for all/some of the sweet ingredient of the drink. The closest alternative that’s widely available is likely Giffard Piment D’Espelette, which is a chile liqueur from France with a similar spicy and sweet flavor profile. That said, it’s by no means an ideal substitute since it uses a different type of pepper (Espelette) and contains Rhum Agricole. On the nose, warm dried chili, cinnamon, and cacao. What Is Ancho Reyes?

This is it. If you like, it’s a coffee martini livened up with the warming and sweet, yet spicy, flavour profile of Anchos Reyes chilli liqueur. Ancho Reyes Barrica is inspired by a 1920s menjurje recipeand provides a blend of heat, sweetness, smoke, and spice, offering flavours of dulce de leche, spiced vanilla, cinnamon and orange zest layers atop the warm chilli heat that Ancho Reyes is known for. It can pair really well with rum, whiskey, or any other barrel aged spirits that have deep dark flavors to them. But it can also go with bright flavors like lime, grapefruit, and mango, or you could play off some of its more subtle flavor notes by mixing it with chocolate, cinnamon, or cloves. The original is made with late harvest poblano peppers, which are laid out to dry for several weeks until they become smoky, sun-dried ancho chilies. For the Verde, they use early harvested poblano peppers, which are green instead of red. They also fire roast a portion of the peppers to give the liqueur a bright, fresh flavor.

Making infusions with chiles is not that uncommon and when you try it yourself it can be really easy to take it way over the edge into an almost undrinkable firewater, but that isn’t the case here.
