Fiona Nevile on Fiona’s traditional elderflower cordial recipe Hi Peta, Yes it does ferment a little = that is what you want. Simmering would kill the brew. Build all ingredients in a large wine glass with cubed ice and mix well. Garnish with mint and an orange slice. My great grandfather, the premier tenant within the park at the time, bought the farm at the centre of the estate and the rest as you say, is history. We have continued to farm and manage our picturesque corner of England since then, and more recently have begun to dabble in the wonderful world of spirits! Just got my red currunt gine under way last week and I have some 4kg of Gooseberries just from two bushes ( in their second year) which I thought was good. So i shall try the gooseberry gin and it should be a welcome addition to next summer!

In terms of the base gin to use, we wouldn’t recommend using any of the beautiful craft gins you’ll find in our Gin of the Month boxes, for example, as you won’t be able to taste any of the beautiful, delicate botanicals. A good quality, neutral London Dry Gin from the shops will work just fine.If you are a gooseberry fan, investing in a desert gooseberry bush as well as a green one extends the season as dessert gooseberries ripen far later than the tart, green ones. There’s certainly no shortage of flavoured gins in the supermarkets these days – everything from violets and geraniums to blood oranges and grapefruits make their way into the staunchly British spirit. But while these are at best overly sweet and at worst full of artificial flavourings, it’s far tastier and cheaper to make your own. And best of all – all it requires is a bit of sugar, some gin, your chosen fruit and time for everything to infuse together. Use a basic, cheap gin. The gooseberries will do the flavouring work, with the gin acting as a flavour carrier. There is no hard and fast rule here for how long to leave your gin - we recommend at least a week or two, to allow the flavours to steep.

While some of you might feel you’re past the age of day drinking, nothing stops you from having one of these on a sunny day for brunch with some friends and family. If you haven’t noticed how Gin mad the world has gone then you need to unbury your head from the sand. Gin is everywhere and people can’t get enough.

The best of these red varieties is called “Whinham’s Industry”, which sounds eminently Victorian and North of England and probably is.) In an old barn, converted for the purpose, we have spent countless hours adapting our family recipe to new flavours and concoctions, made using the finest ingredients sourced from far and wide. Combine all ingredients in a shaker, shake well and strain into a coupe glass. Garnish with a toast triangle or orange wheel. The Irish summer so far this year has been short. Shorter than the Seven Dwarves, wetter than a factory floor in one of those Safety At Work commercials, and surprisingly cold and gusty this past week.
