The flavour completely fills the mouth, has great feel and a great, lengthy finish. If I thought the original Melbourne Gin Company gin was the best martini gin, I’m now torn between the two! The creativity of Australian gin makers is nothing short of remarkable. The Geelong-based distillery has gone experimental with cherries, sourced from Spreyton in northern Tasmania. The company derives its name from the procera variety of juniper: a unique botanical that only grows a kilometre above sea level in the highlands of Kenya. Yielding a distinctly nutty and savoury flavour that simply cannot be achieved in the much more widely employed juniper communis; it’s an increasingly frequent sight on-premise at luxury hotels around the globe — an indication of Procera’s lofty ambitions.In the most basic sense, gin is a neutral grain distilled spirit that is infused with juniper berries and various other herbs and botanicals, based on the individual recipe. While flavour profiles vary, you can bet it will be floral and piney. How is Gin Made? The growth in the craft segment is typified by the increase in traditional gin’s super-premium-plus sales: while standard gin volumes in Australia are estimated to have declined by over 15% in 2020, super-premium will likely have increased by almost 15% and ultra-premium grew by almost 20% – albeit from much lower bases.
